Lipid Oxidation - Making complex food science easier to follow and apply.
This advanced course helps R&D and supplier quality teams understand what drives lipid oxidation, interpret shelf-life studies, and investigate product stability issues in pet food and rendering.

My role: Instructional design and development
Format: Self-paced eLearning · Articulate Storyline · Approximately 40 minutes
My Approach
I used ADDIE to build a course that connects the chemistry of lipid oxidation to decisions R&D and supplier quality teams make about product freshness and stability.
Â
• Analyze. I started with what learners needed to do on the job: recognize oxidation risks, interpret shelf-life studies, and investigate product stability issues. Those tasks helped define which scientific concepts the course needed to cover.
Â
• Design. I sequenced the content from how oxidation works to what teams can do about it. For example, I broke the radical chain reaction into stages so learners could follow how it unfolds before comparing how susceptible different fatty acids are to oxidation.
Â
• Develop. I built the course in Articulate Storyline using Mars brand colors and typography. On-screen animations and diagrams helped explain the chemistry, while video and AI narration supported the explanations. Closed captions and pause and replay controls gave learners ways to follow along at their own pace.
Â
• Implement. I packaged the course as a 40-minute, self-paced experience with four sections, giving learners a clear path through the material.
Â
• Evaluate. I built in opportunities to check understanding. In one drag-and-drop activity, learners match fatty acid names to molecular structures and compare them from least to most susceptible to oxidation.
